Popcorn is a special kind of corn. Of all the types of corn, popcorn is the only variety that pops.
Inside each kernel of popcorn is a tiny droplet of water surrounded by a hard shell called a hull. As the popcorn is heated, the water turns into steam, which builds pressure inside the kernel. When the hull can no longer contain the pressure — POP! — the kernel explodes and a fluffy new piece of popcorn is born.

The secret is water.Inside each kernel is a little bit of water, making up about 13-15 percent of the whole kernel. As the popcorn heats up, the water inside the kernel changes to steam and exerts great pressure on the outer covering of the seed, called the hull. The pressure builds until the kernel explodes, shattering the hull and allowing the steam to escape. As it does so, the inner starchy parts of the kernel puff out with air and expand into the fluffy popcorn we like to eat.

As the kernel heats up, the water's molecules start to move faster and get farther away from each other; this molecular expansion is the same reason water turns into steam when you boil it. As the water expands it puts pressure against the hard starch.

The drop of water inside the kernel of popcorn becomes steam on heating. The pressure increases and when the popcorn cannot hold the pressure any more, the air escapes and the popcorn pops.
